Guest guest Posted March 10, 2008 Report Share Posted March 10, 2008 @@@@@ Broccoli Couscous Soup 1 large onion, chopped 2 cloves garlic, minced 2 Tbsp butter/ 1 Tbsp oil 4 cups broccoli, chopped 1/2 cup Organic Whole Wheat Couscous, (100% Organic) 1 1/2 tsp salt 1/4 tsp ground rosemary 1 Tbsp nutritional yeast flakes, optional 1 Tbsp lemon juice Parmesan cheese, grated 1) Add 5 cups water plus broccoli and couscous. 2) Bring to a boil, reduce heat, and simmer uncovered for 15 minutes or until the broccoli is soft. Add salt, rosemary, nutritional yeast flakes, and lemon juice. 3) Purée in blender or food processor. 4) Return to stove and simmer for 5 more minutes. 5) Serve with grated Parmesan cheese.
