Guest guest Posted March 10, 2008 Report Share Posted March 10, 2008 @@@@@ Casablanca Couscous with Tofu 1/2 onion, chopped 3 cloves garlic (more or less depends on your preference) 1.5 cups of chopped carrots 1 cup of chopped celery 1.5 cups sliced mushrooms half a cup of raisins 1 can of chickpeas 1 can of tomato sauce 1 package of extra firm tofu Optional spices to taste: curry powder, paprika, cumin, salt, etc. Brown onion, garlic and tofu in a large pan. In a smaller pan on the side, brown the carrots, celery and mushrooms individually and add to the large pot one by one. Add the tomato sauce, chickpeas, raisins and spices. Bring to a boil and simmer for about 20 minutes. Cook the Couscous on the side and serve the mixture over it when it is done.
