Guest guest Posted March 9, 2008 Report Share Posted March 9, 2008 @@@@@ Chili Couscous Pie 2 1/2 cups water, or vegetable stock 2 cups couscous 2 cups shredded soy cheese 3 cups prepared chili 1/2 cup finely minced onion 1 (4 ounce) can diced green chiles Bring water to a boil in a saucepan. Stir in couscous, cover, and remove from heat. Allow to sit for 5 minutes, then spread couscous in the bottom of a lightly oiled baking dish. Sprinkle couscous layer with half the cheese and then top with all of the chili. Top with onion and diced chiles, and add a layer of remaining cheese. Bake at 350° for about 30 minutes or until bubbly.
