Guest guest Posted March 9, 2008 Report Share Posted March 9, 2008 @@@@@ Tropical Couscous Recipe 2-1/4 cups fresh orange juice 1 tsp ground cumin 1 box (10 ounces) couscous 2 Tbsp olive oil 2 Tbsp reduced-sodium soy sauce 2 Tbsp fresh lime juice 1/4 cup chopped fresh cilantro 2 Tbsp chopped fresh basil, or 1 tsp dried 2 Tbsp chopped fresh chives 1 tsp grated fresh ginger 1 mango, peeled, pitted and chopped 1/4 cup pine nuts, toasted Bring orange juice and cumin to boiling in a medium-size saucepan. Add couscous and cover. Remove from heat and let stand 5 minutes. Remove to a large bowl; cool. Mix olive oil, soy sauce and lime juice in a small bowl. Stir into couscous. Stir in cilantro, basil, chives, ginger, mango, and orange. Sprinkle with pine nuts.
