Guest guest Posted March 9, 2008 Report Share Posted March 9, 2008 @@@@@ Apple Cinnamon Couscous Cake 1 1/4 cups couscous 2 cups apple juice 1 cup water pinch of salt 1 teaspoon ground cinnamon 1/2 cup chopped roasted pecans 1/2 teaspoon vanilla Bring juice, water to a boil. Add salt, couscous and cinnamon. Stir and adjust heat to low. Simmer 10 minutes. Remove pan from heat. Add pecans and vanilla and let sit another 10 minutes. Rinse an 8x8 inch baking dish or mold with water. Do not dry. Spoon couscous mixture into pan and pack down. Let cool before cutting into squares or inverting on a serving platter. Refrigerate leftovers.
