I cheated and added some bottled curry paste and vindaloo spice from Penzy's ( ). I just kept adding things and suddenly I had enough curry for 2 weeks. Guest guest Posted March 8, 2008 Report Share Posted March 8, 2008 heehe I forgot to put what all ended up in the curry - onion, chickpeas plus some cooking liquid not too much, 1 pkg froz spinach, 1 can low-fat FriChik minus broth (too salty) - pieces sliced, 1 can diced tomatoes drained but saved liquid to add if curry got too dry. Spices: 1 ~ 1 1/2 Tbs bottled tikka masala paste, 1 tbs vindaloo spice (from Penzy's). I just kept adding things that caught my eye in the fridge and adjusting the spice until it was hot enough. Instead of the vindaloo mix, curry powder would be just as good. I'm curried out -- greek lunches this week. What are you planning?
