Guest guest Posted March 5, 2008 Report Share Posted March 5, 2008 @@@@@ Fava Bean Hummus 1/2 lb. fava beans, shelled 1 garlic clove, peeled and placed through a garlic press 2 tsp. lemon zest 1 Tbs. olive oil 1/2 tsp. freshly chopped oregano 1/2 tsp. toasted sesame seeds kosher salt, to taste freshly ground black pepper Blanch fava beans for two minutes in boiling salted water. Cool immediately in ice water. Remove tough skin from blanched beans. In a food processor or blender, combine all the ingredients and puree until smooth.
