Guest guest Posted March 5, 2008 Report Share Posted March 5, 2008 @@@@@ Classic Moroccan Hummus 1 large can (19 oz) chick peas, drained 2-3 Tbsp. ras el hanout spice seasoning, (add more to taste) 1/2 tsp. salt 2 Tbsp. fresh lemon juice 6 Tbsp. extra virgin olive oil To Prepare: Place all the ingredients in a food processor. Pulse thoroughly until the mixture until smooth and creamy. To Serve: Garnish with finely chopped red onion and a squeeze of lemon if desired. To show off the rich color of this hummus, choose a serving bowl with a contrasting color such as blue, green or white. Serve with a basket of pita triangles or small crackers such as mini stoned wheat thins. Serves 6-8. Place the plastic bag of ice on a plate and cover with a cloth napkin. Now nestle the bowl of hummus on the napkin.
