Guest guest Posted March 5, 2008 Report Share Posted March 5, 2008 Oriental Mushroom and Cucumber Salad 3 tbsps. rice wine vinegar 2 tbsps. soy sauce 1 tbsp. vegetable oil 2 tsps. minced fresh ginger 1/2 tsp. minced garlic 2 cups peeled and thinly sliced cucumbers 1 1/4 cup fresh white mushrooms, sliced 1 3.5 oz. pkg, fresh enoki mushrooms 1 cup snow peas, cut diagonally in halves 1 cup thinly sliced radishes In a medium bowl whisk together vinegar, soy sauce, oil, ginger and garlic. Stir in cucumbers, white and enoki Mushrooms, snow peas and radishes. Serve, if desired on lettuce lined serving plates. Makes 4 servings. Calories 81, Fat 4 g, Carbs 1 g, Sodium 487 mg, Fiber 2 g.
