1 cup finely chopped plum tomatoes

3 tablespoons capers

2 tablespoons extra virgin olive oil

1 tablespoon cider vinegar

2 teaspoons dried Basil Leaves

1 teaspoon dried Oregano

1/8 teaspoon Red Pepper -- Crushed

Mix all ingredients in medium bowl.

Let stand at room temperature 30 minutes to allow flavors to blend. Serve with

pita wedges.

Makes 8 (2-tablespoon) servings

Take a break from the Mexican version and go Italian tonight with a blend of

finely diced tomatoes, Italian herbs, capers and crushed red pepper. Serve with

pita wedges instead of the same old tortilla chips.
