This is excellent.

 

Greek Style Couscous Spread

 

3/4 cup couscous

1 cup boiling water

2 tbsps. oil

1/4 cup lemon juice

1 tsp. oregano

salt and pepper

1/4 cup cucumber

1/2 cup red pepper, chopped

1/2 cup pitted black olives, sliced

1/4 cup red onion, chopped

1 tbsp. fresh parsley, chopped

1/2 cup feta cheese, crumbled

 

In a medium bowl, combine couscous and boiling water.

Stir until combined.

Set aside for 10 minutes or until couscous is soft and

water is absorbed.

In a small bowl, make dressing by combining canola

oil, lemon juice, oregano, salt and pepper. Mix well.

Set aside.

Fluff couscous with a fork. Stir in cucumbers, red

pepper, olives, onion, parsley, and feta cheese.

Add dressing. Mix lightly until combined.

Refrigerate and serve on crackers. Yields 3 cups.
