I thought that I should introduce myself and say thank you for sharing so many wonderful recipes. I have been a vegetarian for 14 years and most of my family and friends are also vegetarians. It is what I consider normal for me and I am always searching for great food ideas. I am recently separated and my ex did all of the cooking. He was a wonderful cook so I was lucky enough to pick up some great recipes and ideas in the kitchen. One thing that he did was an eggplant lasagne. It is one of those things where the recipe is not written but I will try my best to tell you how to make it. He took eggplant cutlets and breaded them and then fried in Olive Oil. He made homemade veggie sauce and used the eggplant between layers of cottage cheese, mozarella cheese, noodles and sauce. He also would use the same breaded eggplant and put it in the oven smothered in cheese and sauce - on top of a plate of fresh noodles. When I bread the eggplant, I use some spices to season the bread crumbs such as paprica, hot chili, salt, pepper, cheese, etc... I am now getting back into cooking and I have to say that I absolutely love it! I look forward to many more days of good reading and yummy recipes!
