Brussels Sprouts with Apple and Pecans

 

1 1/2 pounds Brussels sprouts, trimmed

1 1/4 cups apple juice

1 medium red apple, finely diced

2 tbsps. lemon juice

1/3 cup pecan pieces

1 tbsp. butter

salt and pepper to taste

 

Bring a large pot of water to boil. Cook the Brussels sprouts 2 minutes, then

drain well, cool in cold water and drain well again. Place the apple juice,

diced apple and lemon juice in a wide skillet and bring to a boil. Add the

Brussels sprouts and lower heat to a simmer; cook until the Brussels sprouts are

heated through and the apple juice is almost reduced to a glaze. Mix in the

nuts, salt, pepper and butter. Spoon into a dish and serve.

Makes 6 servings.

Calories 145, Fat 7.3 g, Carbs 20.6 g, Sodium 45 mg, Fiber 5.2 g.

you know, I just don't like Brussel sprounts boiled or steamed, but I LOVE them

grilled or roasted. I'll bet this recipe would be fantastic just like it is, but

tossed all together and then roasted the a 450 oven
