Hi Robyn,

I agree there is no perfect sub. Some are close. I just avoid them. I add

tofu to my lasagna and stuffed shells. I really miss cottage cheese. If I

crumble firm tofu and add a dash of lemon juice and salt it's a pretty good sub.

I couldn't stand any recipe I tried in the Uncheese Cookbook

Hi I am new to the group. I wish there was a perfect non-dairy cheese!

My 3 y/o son is allergic to dairy and the rice and almond substitutes

all have the milk proteins in them. I found the Vegan Gourmet brand,

but it contains soy and carageenan (which I'd like to avoid when I

can), but the taste is somewhat satisfying when melted only.

 

There is this book that I got called 'The Ultimate Cheeseless

Cookbook'. You can look it up on Amazon. I've tried a couple of the

recipes, but have had to play with them a bit b/c the taste can't be

compared for a cheese lover...however, my son doesn't know the

difference. They have recipes to make your own 'block' cheeses. They

do contain Tahini, so if you're allergic to nuts/seeds, then I'm not

sure how it will turn out.
