It wouldn't work for everyone, but we love it. We don't do a regular Easter dinner, we do a " high tea " . We usually do a picnic-style spread with two pots of fancy tea (like Tea Forte and Taylor's Tea Room), fancy imported sugars and cookies/biscuits, an assortment of little sandwiches, strawberries and little fancy cut fruits or a fruit salad, etc. I usually go to our local English tea house and buy petit fours. And then we set out all the fancy mismatched china - I've collected different pieces over the years and now have quite a collection including creamers shaped like a kitten and a bunny. On the years they aren't with me they have a conventional Easter brunch with their dad's family at a fancy restaurant. How about some lavendar cookies or mini snadwiches with cream cheese topped with watercress, radish and cucumber slices? The mock egg salad will be perfect. As I was writing that email I realized I need to figure out what I'm doing this year since it's my year for Easter. I think I will make your mock egg salad for one of the sandwiches. My favorite is cucumber and cream cheese and I do one with turkey for my meat eater. This is the one and only time I actually buy white bread and cut the crusts off and make those little triangle sandwiches. I'm lucky because we have a little shop in town that imports little treats and fancy sugars from France and Japan.
