Veggie Times Herb Pesto

2 c fresh herbs; * see note

1 tb fresh thyme; * see note

1/4 c olive oil

1/4 c pine nuts; or walnuts, toasted

salt and pepper; to taste

3 cloves garlic; minced

1/4 c grated parmesan cheese, optional

water, as needed

 

 

 

 

Process until smooth adding water 1 tablespoon at a time. If a chunkier

pesto is desired, omit water.

 

Makes 3/4 cup.Yield: 12 Servings
