Pumpkin Seed Cilantro Pesto

 

1 Tablespoon garlic, minced

1/4 cup Parmesan cheese

1 cup cilantro leaves

3 Tablespoons toasted pumpkin seeds

2 Tablespoons olive oil

1/4 teaspoon salt

Juice from 1/2 lime

1/3 cup sour cream

 

 

 

 

Blend all above ingredients in a food processor or blender until smooth.

(Mixture may be made ahead and frozen for future use. This is a good way to use

up surplus cilantro you may have on hand.)
