Guest guest Posted February 23, 2008 Report Share Posted February 23, 2008 I like this recipe: Zucchini Muffins A delicious way to use the over abundance of zucchini from your garden. 1 Tbs Flax Seed 1/2 tsp Baking Powder 3 Tbs Water 1/2 tsp Sea Salt 2/3 c Sweet Cloud Rice SyrupR 1/2 tsp Cinnamon 1/4 c Soymilk 1 tsp Vanilla Extract 1/4c Extra Virgin Olive Oil 1 c shredded Zucchini 2 c Whole Wheat Pastry Flour 2/3 c chopped Walnuts 1 tsp Baking Soda 1. Preheat oven to 350o. 2. Process flax seed and water in food processor or blender until thickened. 3. Add the rest of the wet ingredients and process until well mixed. 4. Mix dry ingredients in large bowl. 5. Stir in wet ingredients until blended. 6. Stir in vanilla, zucchini and walnuts. 7. Pour batter into oiled muffin cups. 8. Bake at 350? for 20 - 25 minutes until toothpick comes out clean.
