Guest guest Posted February 22, 2008 Report Share Posted February 22, 2008 Warm Shiitake Mushroom Salad Dressing... 3 tbsps. olive oil 3 tbsps. dry sherry or cooking sherry 1/8 tsp. each salt and ground pepper Topping... 2 tbsps. olive oil 8 ozs. fresh shiitake mushrooms, stemmed and sliced 2 cloves garlic, crushed Salad... 8 cups mixed greens 1/4 cup toasted chopped walnuts For dressing whisk oil, sherry, salt and pepper in small measuring cup and set aside. Heat remaining 2 tbsps. oil in large skillet over medium- high heat; sauté mushrooms with garlic about 3-4 minutes or until lightly browned. Remove from heat and stir in about 2 tbsps. dressing. Toss greens with remaining dressing and mound on 4 salad plates. Spoon warm mushrooms on top and garnish with walnuts if desired. Makes 4 servings.
