Guest guest Posted February 22, 2008 Report Share Posted February 22, 2008 Squash, Zucchini & Potato Medley 1 cup diced or sliced potatoes 4 tbsps. olive oil 1 cup diced or sliced zucchini salt, pepper, onion powder, garlic powder to taste 1/2 cup diced or sliced green onion In large iron skillet, heat oil. Add all vegetables and season to taste, and heat on high for 4 minutes, turning often. After browning, turn down heat and simmer until all vegetables are soft. Makes 4 servings.
