They are going to start coming over for dinner at least once a week and one of them is a severe diabetic. He has type 1, I believe. I have to have a decent appetizer so he doesn't go low while waiting to eat. Every time he's been over here, he falls asleep because of low blood sugar, so I have to have something ready when he gets here. (I'm ovo-lacto and I plan to use a lot of eggs that I get from my backyard. Here's what I have planned for tonight. I need an appetizer recipe (thinking of hummus with tortillas) Starter: avacodo, tomato salad with vinagrette. Dinner: spanikopitta from The vegetarian mother's cookbook, yeast rolls, steamed brocolli, dark green salad with raw redwine vinagrette. Dessert-egg custard and blue berries...or Pistachio Rosewater cookies from Veganomicon. So, tell me if you see some problems and please, PLEASE give me some ideas for diabetic-friendly menus for our future dinners/game nights. It doesn't have to be elaborate and you can tell me the name of the recipe without having to list every detail of it...I'm pretty active in the kitchen. Thanks in advance.
