Guest guest Posted February 20, 2008 Report Share Posted February 20, 2008 Chipotle restaurant style guacamole 1 ripe avocado 1/2 a small red onion, finely chopped 1/2 a lime 1/2 - 1 jalapeno depending on how hot you want it, chopped 1 handful of cilantro, roughly chopped Hefty pinch of salt Optional: 1 clove of garlic, minced Cut the avocado in half and remove the pit. Scrape the flesh out with a fork. Before mashing, squeeze half a lime over the avocado. The lime juice will prevent the avocado from browning as well as add some flavor. Add the onion, jalapeno, and salt and mix well. Chipotle does not use garlic in their guacamole, but I add it sometimes because it give some nice extra flavor.
