" Onion Patties " (by Donna)

 

3/4 cup flour

2 tsp. baking powder

1 tablspn. sugar

3/4 tsp. salt

1/4 tsp. pepper

1 tablspn. cornmeal

3/4 cup soy milk or rice milk or whole milk (either of

the 3 work fine)

2 medium onions finely chopped

little olive oil to coat pan

** Optional finely diced jalapeno pepper or dried

parsley flakes

 

Combine flour, baking powder, sugar, salt, pepper and

cormeal and mix well. Add

milk and stir. Add onions and mix well.

Coat a non-stick skillet with a little oil and heat.

Drop small rounds of

batter into pan and fry about 4 minutes on each side.

They will puff up and

turn golden brown.
