I wanted to let you know what as soon as they are washed, they start to degrade. Always ask how old they are, when they were gathered, etc. When I had my larger hens, the eggs were dirtier and I just brushed them off a little before putting them in a recycled egg carton. I gather mine daily so I know what I am getting when I crack it. The last eggs I bought from a farmer's market was the worst. I had to make a lot of potato salad for a reunion and had to have more than my few. The first one I cracked was a partially formed chick. NO THANK YOU! I threw them all out. If in doubt, take a small mag light type flashlight and place it flush against the large end. If the light shines all the way through with no dark shadows, egg is safe. Tip two... when buying fresh eggs, they have to be at least 10 days old to get a good hard boiled egg. As the egg ages the lining shrinks from the shell making for easier peeling.
