Aubergine Pate - 1 pt, 16g Carbs, 6g Fiber

Amount Measure Ingredient -- Preparation Method

2 medium eggplant

2 garlic cloves -- crushed

1 tablespoon oil

2 tablespoons pomegranate juice -- or orange juice

1/2 teaspoon paprika -- sweet or smoky

pinch chili powder -- or favorite chili seasoning mix

pita bread

 

Prick the eggplants with a fork and place on a baking tray. Bake in the oven at

180C (350F) for 30 minutes or until tender. When the eggplant are cooked, remove

the skin while hot.

 

 

Puree the flesh in a food processor with the garlic, oil, pomegranate juice,

paprika and chili. Leave to cool, then serve with pita bread.

ChupaNote: grilling adds another layer of flavor. This is a very forgiving

recipe. Add more juice to make a thinner dip. Add hot broth and a little more

oil to make a great base for pasta sauce. Add a couple of tablespoon of cornmeal

and you have a great filling for ravioli or dumplings. These spices are mild.
