Bake in the oven at 180C (350F) for 30 minutes or until tender. When the eggplant are cooked, remove the skin while hot. Puree the flesh in a food processor with the garlic, oil, pomegranate juice, paprika and chili. Leave to cool, then serve with pita bread. Serves 4 ChupaNote: grilling adds another layer of flavor. This is a very forgiving recipe. Add more juice to make a thinner dip. Add hot broth and a little more oil to make a great base for pasta sauce. Add a couple of tablespoon of cornmeal and you have a great filling for ravioli or dumplings. These spices are mild.
