Guest guest Posted February 17, 2008 Report Share Posted February 17, 2008 * Exported from MasterCook * Broad Bean and Butter Bean Pâte/Puree - 3 pts, 20g carbs, 7g fiber Recipe By :Food Matters by Jennifer Harvey Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 2/3 ounces cooked cannelloni beans -- (butter beans), 2/3 pound sea salt and black pepper -- freshly ground 1 lime -- juice and rind 1 clove garlic 4 ounces shelled broad beans -- (use young beans - if the shelled beans are white in colour they are too old), 1/4 pound 4 tablespoons olive oil splash verjuice -- (optional) 1/2 medium onion 1 tablespoon horseradish -- heaping 2 tablespoons chopped parsley Add all ingredients to a blender or food, seasoning well. Process processor until smooth and creamy. If it becomes, add a little too thick while processing warm water. Serve as a pâte with water biscuits. Serves 8 ChupaNote: use 1 (15 oz) can of butter beans and 1 can of broad beans, or fava beans (15 oz), rinsed and drained. Add more lime in warm water to thin to taste. If you don't like spicy, start with 1 teaspoon prepared horseradish and work your way up. Used a 1/4 cup chopped mixed herbs (parsley, mint, cilantro).
