Quick After-Work Vegetable Stock - 0 pts, Carbs 7g; Fiber 2g

Amount Measure Ingredient -- Preparation Method

1 garlic clove -- minced

1 onion -- peeled and chopped

1 celery stalk -- chopped

2 carrots -- peeled and sliced

1 zucchini -- peeled and sliced

1/4 cup chopped fresh parsley

1 parsnip -- peeled and sliced

10 cups water

 

Combine all ingredients, in a large pot.

Simmer, covered, 45 mins.

Strain broth.

 

Makes 2 quarts stock.

ChupaNote: this is a great overnight slow-cooker recipe too. You wake up in the

morning with a potful of stock to do your cooking with or put in ice cube trays

and freeze. I put the garlic, a bouquet garni, and a handful of different

peppercorns in a porcelain tea ball in my stock pot for my flavor.
