These are elegant and a favorite of mine.

 

Potatoes Steamed in White Wine

 

1 cup white wine

1/2 cup broth or water

1 pound potatoes, fingerlings or red potatoes

1 tablespoon olive oil

1 tablespoon chopped fresh tarragon or your fav herb

salt and pepper

 

Bring the wine and broth to a boil in the bottom of a

steamer. Place the potatoes in one layer in the top of

the steamer and cover. Cook for about 13 minutes.

Remove the potatoes and sprinkle them with oil and

tarragon. Season to taste with salt and pepper. Serves

4.
