Angel Hair Tomato and Pesto Toss

 

1/2 cup olive oil

2 cloves garlic, minced

1/4 cup sliced green onions

1 14 1/2 oz. can whole tomatoes, drained and diced

2 tablespoons chopped fresh basil or 2 teaspoons dry basil

1 teaspoon salt

1/4 teaspoon coarse ground black pepper

angel hair pasta, cooked according to package directions

grated parmesan cheese

 

Heat olive oil in a large skillet. Add garlic and green onions and saute for one

minute. Stir in tomatoes, basil, salt and pepper. Cook for two minutes, stirring

frequently. Toss tomato mixture with hot, cooked pasta and serve immediately

with parmesan cheese.

Makes 4 to 6 servings.
