Tofu Skewer in Peanut Butter Marinade - 2 pts, Carbs 8g, Fiber 2g

2 tablespoons peanut butter, creamy

1 clove garlic -- peeled and crushed

juice of 1 lemon

2 tablespoons water

8 ounces tofu

3 green bell peppers -- seeded and cut into quarters

 

Mix peanut butter, garlic, lemon juice, and water to make a pouring consistency.

 

Cut tofu into eight squares and marinate in peanut butter mixture for 20

minutes.

 

Preheat broiler. Blanch bell peppers by placing in boiling water for 3 minutes.

Drain and thread onto skewers with tofu.

 

Place kebabs under the hot broiler and cook about 6 minutes, turning and basting

with the remaining marinade.

 

Serves 4.
