Three Mushroom Pasta in Cream Sauce - 9 pts, Carbs 26g; Fiber 3g

Amount Measure Ingredient -- Preparation Method

5 dried mushrooms

2 tablespoons pine nuts -- or flaked almonds

8 ounces plain dried noodles

1/4 cup butter

1/2 pound button mushroom

1/4 pound oyster mushrooms -- or brown mushrooms

1/2 cup whipping cream

pinch ground nutmeg

freshly ground black pepper

 

Pour boiling water over dried mushrooms and soak for 10 minutes.

 

In a hot dry skillet, toast pine nuts or almonds. Cook noodles in salted boiling

water 8-10 minutes or as directed on package. Drain and keep warm.

 

Drain mushrooms and cut off stems. Slice tops thinly. Melt butter in a large

skillet and saute all mushrooms 3-4 minutes until they soften.

 

Add cream, nutmeg and pepper and bring to a boil. Add pasta and toss together.

Sprinkle with toasted pine nuts or almonds and serve.

 

Makes 4 servings.

Everyone loves this creamy pasta dish, which I serve straight from the pan. If

you cannot find dried mushrooms or oyster or brown mushrooms use 1 pound button

mushrooms.

 

ChupaNote:if concerned about the whipping cream separating, add the pasta when

the whipping cream starts to develop little bubbles around the edges. Don't

bring to a full roiling boil.
