Carrot and Tarragon Carbonara Sauce - 7 pts, Carbs 30g; Fiber 2g

Amount Measure Ingredient -- Preparation Method

3/4 pound dried fettuccine

2 carrots -- peeled and diced

1 tablespoon minced shallots -- or onion

1 tablespoon olive oil -- or butter

3 eggs -- beaten

6 tablespoons finely grated Parmesan cheese

2 tablespoons chopped fresh tarragon

salt and freshly ground pepper to taste

freshly grated Parmesan cheese -- to serve

 

Cook fettuccine in salted boiling water 7-8 minutes or as directed on package.

 

Saute carrots and onion in oil or butter 6-7 minutes.

 

Mix eggs, cheese, tarragon, salt and pepper.

 

Drain pasta and toss with hot carrots and egg mixture.

 

Serve with more Parmesan cheese and black pepper.

 

Makes 4 servings.

The sauce should be very creamy with the eggs hardly set. Too often Carbonara

sauces are grainy because the eggs are overcooked. If you work quickly the eggs

can be tossed with the pasta after it has been taken off the heat - there should

be sufficient heat in it to cook the eggs to the right consistency.

 

ChupaNote: if you're worried about the eggs being cooked enough, use pasteurized

eggs such as Eggbeaters.
