Guest guest Posted February 16, 2008 Report Share Posted February 16, 2008 * Exported from MasterCook * Tuscan Soup with Pasta - 8 pts Recipe By :Quick After-Work Vegetarian Cookbook Serving Size : 4 Preparation Time :0:00 Categories : LowFat (Less than 30%) Quick Vegan WW Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 (14-ounce) can chickpeas -- drained or garbanzos 1 (14-ounce) can chopped tomatoes -- with juice 3 cups vegetable stock -- (see quick recipe below) 1 clove garlic -- crushed 1/4 cup extra virgin olive oil -- plus more to serve 1/4 cup dried rosemary 1 tablespoon tomato puree freshly ground black pepper 2 ounces soup pasta Puree chickpeas and tomatoes with juice in a blender or food prcessor. Stir in stock. Gently saute garlic in olive oil 1-2 minutes. Do not allow it to brown, Add pureed vegetables, rosemary, tomato puree, and pepper. Bring to a boil and simmer 5 minutes. Add pasta and cook another 10 minutes. Serve with extra-virgin olive oil. Serves 4 Per Serving: Calories 350; Total Fat 17g (sat fat2g); Fiber 7g; Carbs 42g; Protein 11g; Chol 0mg; Sodium 196mg. ChupaNote: to spice it up I used 1/2 t. red pepper flakes, 1/4 t. freshly ground black pepper, and 1/4 t. white pepper. Definite zing. Next time I'll try chile garlic sauce or harissa. Used orzo for the soup pasta. Quick After-Work Vegetable Stock 1 garlic clove, minced 1 onion, peeled and chopped 1 celery stalk, chopped 2 carrots, peeled and sliced 1 zucchini, peeled and sliced 1/4 cup chopped fresh parsley 1 parsnip, peeled and sliced 10 cups water Combine all ingredients, in a large pot. Simmer, covered, 45 mins. Strain broth. Makes 2 quarts stock.
