Add saffron, if using, and cook a minute longer. Add tomatoes and cook another 2-3 minutes to make a thick paste. Add chickpeas or garbanzos and mix well. Cook spinach in a covered pan without any water 1-2 minutes until crisp-tender. Toss spinach with chickpeas or garbanzos and spoon into a bowl to serve. Makes 4 servings.
