Spanish Tapas Chickpeas with Spinach - 4 pts

Amount Measure Ingredient -- Preparation Method

1 clove garlic -- peeled and crushed

1 small onion -- peeled and chopped

2 tablespoons olive oil

2 saffron threads -- (optional)

3 tomatoes -- skinned, seeded and chopped

1 (14-ounce) can chickpeas, canned -- drained

1 pound spinach -- washed and shredded

 

Saute garlic and onion in oil until softened. Add saffron, if using, and cook a

minute longer. Add tomatoes and cook another 2-3 minutes to make a thick paste.

Add chickpeas or garbanzos and mix well.

 

Cook spinach in a covered pan without any water 1-2 minutes until crisp-tender.

 

Toss spinach with chickpeas or garbanzos and spoon into a bowl to serve.

 

Makes 4 servings.
