(serves 4-6) Teens and kids love this finger food for breakfast. Breakfast Nachos 1 med. size pkg. Blue Corn Chips (Reg. Corn Chips will work too) 1 cup refried Vegetarian Beans 2 cups shreaded Monteray Jack Cheese or any combination of your favorite cheeses. (the pre shreaded Mexican mix cheeses are also good) 1 cup prepared salsa 4 eggs-Scrambled 1 cup faux sausage(pan fried and crumbled) 1 Avacado sliced Optional: Garnish with Cilantro to taste Optional: Diced green chilis Directions: On a large oven proof platter, arrange Blue Corn Chips, leaving an area in the center open. In the center place refried beans, and top with salsa and then cheese. Place the platter in a pre-heated (350 degree) oven just long enough to heat the beans and melt the cheese. Remove from the oven and top the bean-cheese with scrambled eggs Top the eggs with the pan fried crumbled faux sausage Add sliced Avacado Optional: Garnish with fresh chopped Cilantro Optional: Diced green chilis Like all Nachos this is finger food.
