Guest guest Posted February 13, 2008 Report Share Posted February 13, 2008 Roasted Garlic Cannellini Spread 1 15 ounce cans cannellini beans, drained and rinsed 8 cloves roasted garlic, mashed 2 tablespoons olive oil 2 tablespoons minced fresh basil leaves salt to taste 1/4 teaspoon freshly ground black pepper Mash the beans and garlic with the back of a wooden spoon in a medium bowl. Add just enough oil to make a smooth paste. Mix in the remaining ingredients and blend thoroughly. To roast garlic, heat the oven to 350 degrees. Place unpeeled garlic cloves in a small baking dish and cover with the lid. Roast in the center of the oven for about 20 minutes or until softened. Cool completely and peel the cloves.
