Guest guest Posted February 10, 2008 Report Share Posted February 10, 2008 Moros y Christianos from Marta's Cuban Kitchen 3 cups white rice 1 large white onion, finely chopped 1/2 cup green bell pepper, finely chopped olive oil 4 cloves garlic, crushed 2 cans black beans w/liquid 1/2 can tomato paste 1 tsp cumin pinch of saffron 1 tsp oregano 1 bay leaf 2 Tbs balsamic vinegar 2 cups vegetable broth salt & pepper to taste rinse the rice in cold water until water runs clear in a large pot with a lid, saute onion, peppers and garlic in olive oil until translucent add tomato paste,black beans, cumin,saffron,oregano,bay leaf, balsamic vinegar blend together over medium heat add broth and rice, bring to a boil reduce heat, cover, simmer for about 20- 25 min or untill rice is fully cooked while still hot, drizzle a bit of oilve oil over the cooked rice and fluff *** good if served with hot crusty Cuban/ French bread and a green salad** Yasmin Quote Link to comment Share on other sites More sharing options...
