Slow Cooker Diabetic Curried Fruit - 2 pts

Amount Measure Ingredient -- Preparation Method

1 can peaches -- undrained (16 oz can)

1 can apricots -- undrained (16 oz can)

1 can pears -- undrained (16 oz can)

1 can pineapple chunks in light syrup -- undrained (20 oz can)

1 can black cherries -- undrained (16 oz can)

2 tablespoons brown sugar

1 tablespoon brown sugar substitute

1 teaspoon curry powder

3 tablespoons quick cooking tapioca -- or 4 tablespoons depending on

how thickened you'd like the finished dish tobe

margarine -- optional

 

Combine fruit. Let stand at least 2 hours, or up to 8 hours, to allow

flavors to blend. Drain. Place in slow cooker.

 

Add remaining ingredients. Mix well. Top with margarine, if you want.

 

Cover. Cook on low 8-10 hours.

 

Serve warm or at room temperature.

 

Makes 8-9 servings.
