Thanks, Ani Cheap Eats: Grits Casserole 1 cup uncooked corn grits (not canned hominy. You find these in cereal aisle in bag or box) 2 cups Cheddar or American or Monteray Jack cheese, shredded (reserve a little to top) (this is a lot of cheese, so cut in half if you like) 4 to 6 eggs 1/2 cup diced red, orange, yellow sweet peppers (more or less, to taste) 1 medium onion, diced 1 to 2 tablespoons flour (I'm not picky, use what you have) 1 tablespoon oil or margarine Salt and pepper to taste Cook grits according to package directions, using slightly less water. (3 3/4 cups water to 1 cup grits). Stir grits often as they cook. Like polenta they will bubble like lava and burn, so use a long spoon. Saute onions, peppers in oil, scramble eggs in same pan. Mix cheese, cooked grits, vegetable and egg mixture and flour together. Pour into greased casserole dish or individual ramekins. Lightly sprinkle with grated cheese. Bake at 350*F for about 20 to 30 minutes or cheese melted. Freezes easily. Can be made with scrambled tofu and soy cheese. Can be made with hot peppers if you have tummies that can handle. (I miss hot peppers, sigh.) Can also add sauteed, chopped mushrooms or whatever else you want. Cost: 1 cup of grits (not the little microwave bags) .35 cents 4 to 6 eggs .50 cents Mixed sweet peppers 1.00 Cheese 2.00 (actually it was a lot less because our store had a sale, but...)
