Guest guest Posted February 9, 2008 Report Share Posted February 9, 2008 Buy raw unshelled peanuts to boil. I prefer the green peanut boiled. They aren't green in color, just younger peanuts and more tender with a wonderful flavor. Mature peanuts are easier to find year around and taste very good too. Here in the south they start showing up green in the farmers markets and produce stands in late July thru September. To boil peanuts. Wash and clean them in the shells several times. Pull off any stems. Add to a pot of boiling water. I usually use by pressure cooker, but any pot will work, it will just take longer. I boil them covered for 3 hours or so and test one to see if they are tender enough, by cracking one open and eating it. It should be as soft as beans are when cooked. When tender, turn off the pot but LEAVE on the hot burner. Add salt to the water, making it the water very salty. Stir well. Cover and leave for several hours so the salt will migrate thru the shell to salt the peanuts. I usually put a pot on after dinner and just before bed time they are finished cooking. I add the salt, stirring in well, recover and leave it on the stove over night. Next morning they are perfect........ If the peanuts aren't salty enough, stir in some more salt to the water and let set an hour or so. If peanuts are to salty, just pour off some of the water and add some fresh water to it, stirring, and the peanuts will be just right in about 1 hour. Refrigerate any left over peanuts..... Guest guest Posted February 10, 2008 Report Share Posted February 10, 2008 heya....my papaw taught me how to make them at a very tender age when we made them for church functions... you will need: one bag of raw peanuts one box sea salt one large stock pot with lid add 2 C sea salt to the peanuts and cover with water. Bring to a boil on high heat then turn down the heat to med/high and cover. You will have to keep adding water and at least 1/2 C salt each time you add the water. After they are done, give them a good rinse and cool, then chill. There is no tried and true time to boil. Everyone likes thiers different. We usually started boiling in the morning and they were done by lunch time or so. Do you think it would hurt to add cajun spice at some point in this recipe??? I cant really remember where to add in my old recipe. Do you have any ideas,? Guest guest Posted February 12, 2008 Report Share Posted February 12, 2008 I guess it's a southern thing...you see roadside vendors alot here in Tennessee and especially Georgia where peanuts are king. Even the ye ole convience stores have them in crock pots like most stores sell hotdogs... You gotta try them. Some like the peanuts with a little crunch still left in them and others like them on the mushy side. Just remember...get the bagged raw peanuts in the shell.
