The simplicity of its preparation gives it its healthy character. I love Zucchini and love finding different ways of doing it. INGREDIENTS 4 cloves of garlic 3 medium zucchini, sliced 2 tablespoons olive oil DIRECTIONS 1. Peel and dice the garlic while heating the olive oil in a sauté pan over medium heat. 2. Add garlic and zucchini. Stir occasionally. 3. Cook until zucchini is lightly browned. Guest guest Posted February 13, 2008 Report Share Posted February 13, 2008 Small variation on this - I made almost this exact thing last week and it was simple and delicious (as advertised!) However, I sliced zuchinni and onions, brushed them with olive oil and put them in a roasting pan, and sprinkled several cloves of fresh garlic that I ran through a press over everything. Then I sprinkled everything lightly with Chef Paul Praudhommes 'meat magic' (which is just a seasoning mix like season-all, not exclusively for meat as the name would suggest!) and put it in the oven at 400 degrees (i was simultaneously cooking a frozen pizza) mix once or twice and pull it out when it looks ready!
