Quick, easy and delicious My Mom has been making these for years and now I make them from her recipe. It is the best bread ever toasted. " Southern Buttermilk Yeast Rolls " 3 1/2 cups all purpose flour 1 Tblsp. sugar 1 Tsp. salt 1/2 Tsp. baking soda 1 package Fleischmann's yeast (rapid rise) any brand will work 1 cup buttermilk (I use the Saco dried buttermilk with water) 1/4 cup water 2 Tblsp. butter or margarine Set aside one cup of flour. Mix 2 1/2 cups flour, yeast, sugar, salt and baking soda. Heat buttermilk, water and butter to 125 to 130 degrees, now mix into the dry ingredients. Mix enough of the reserved cup of flour to form a soft dough. Knead for 3 minutes on a lightly floured breadboard. Grease a 9X9X2 pan and press dough evenly into pan. Dust top with a little of the reserved flour. Cut dough in 16 squares. Cover dough in pan with foil and place in warm place for 20 minutes (I prepare the over by turning it on low and then turning off so it's just warm). Remove from oven and don't touch dough just preheat the oven to 400 degrees. Now remove the foil and place pan in preheated oven and bake for 20 minutes. Remove pan and cool on wire rack. When cooled break into 16 square rolls. This bread is delicious cut in half and toasted in the toaster over or eaten just as is or used for a sandwich.
