Hi Katie, it is a hot recipe but you can cut down on the spices as

Donna noted. I think you will really like this recipe. Leave the

jalapeno pepper out completely if you like. You could stir in some

Ortega diced peppers, they are mild.

 

Hi Diane, if you use brown rice my I suggest long grain and add at

least a good 1/3 of water and cook it longer. I did try it with brown

rice and it was very good. You could need up to almost 1/2 cup of

liquid though. Give it a check as it cooks towards 20 minutes or so.

Thanks, I will do as you suggest and use a few pieces of diced Ortegas.
