HeartSmart Marinated Kidney Bean Salad - 3 pts

 

1/2 cup grape jelly

2 tablespoons chili sauce (such as Heinz Chili Sauce)

2 cans (16-ounce) dark red kidney beans

1/2 cup celery, diced

1/4 cup purple onion, diced

1 clove garlic, minced

1/8 teaspoon ground black pepper

 

 

 

 

In a medium saucepan, heat grape jelly and chili sauce for about 5 minutes or

until the jelly is melted. Allow mixture to cool while preparing salad. Rinse

and drain kidney beans and place in a bowl. Add celery, onion, garlic, pepper

and grape jelly mixture. Stir and cover. Place in refrigerator for at least 3

hours or overnight before serving.
