Adzuki, Orzo and Pepper Salad

Amount Measure Ingredient -- Preparation Method

2 cups Cooked aduki beans

2 cups Cooked orzo pasta

1 cup Finely-diced crunchy fennel

1 cup Slivered roasted red peppers

1/4 cup Finely-sliced black pitted olives

1/2 cup Packed Italian parsley -- chopped

1/2 cup Dressing -- made with olive oil, balsamic vinegar and

garlic

Salt -- to taste

Freshly-ground black pepper -- to taste

Garnish: Crumbled goat cheese -- or feta cheese

 

Mix the ingredients together and season with salt and pepper; garnish with

cheese.

 

Makes 4 servings.
