Organic Born and Bread by Positive News Mar 7, 2006 Positive News Issue 47 Josephine Farley and Craig Sams, the founders of Green & Black's Chocolate, have embarked on a new venture. Teaming up with Soil Association Award winning baker, Emmanuel Hadjiandreou and his wife, Lisa Sapire, they have turned Judges Bakery in Hastings, East Sussex, into a onestop organics shop. This is the first traditional English bakery to become organic. Everything from the Cornish Pasties to the 'Pink Meringue Pigs' is organically certified by The Soil Association. Alongside a expansive range of white, wholemeal and malthouse breads, Emmanuel has introduced a fantastic selection of artisan and specialist breads, including sour doughs, seeded loaves and rye bread. All white loaves are left to rise over night, just as it was before the days of industrialisation. This means that breads keep better and contain more flavour. Judges Bakery is proud to be one of only two per cent of bakers who make everything from scratch on a daily basis.
