Hi again-

Sorry – just remembered –

After this recent hospitalization, for

intestinal disease, the doc wants me to not eat any raw fibrous vegetables like

lettuce, no matter if it is baby lettuce or not. Gums up the works. We were

brainstorming salad type greens that might work for me (trying to lose weight –

I can gain weight LOOKING at a picture of ice cream) and he said that spinach

was a soft leafy vegetable that chewed well would be okay, but can anyone think

of another leafy soft vegetable that might work (raw for salad)? Cynthia

I'm confused as to why spinach leaf is okay but lettuce not!!!

At least here in the states, spinach is a

very soft leaf that has less, um, membranes (no, that’s not the right

word), um, things in the leaf that look like veins in a human but carry water

to the leaf, oh damn, what are those things called? Spinach only has one of
