From the Toronto Star : Valentine bakery treats for vegans Feb. 10, 2006. 01:00 AM SUSAN SAMPSON Vegan baking can be problematic because eggs and dairy products are banned. But vegans deserve their Valentine sweets, too. Luckily, these cupcakes are moist, dense and delicious. Vegan or not, you will enjoy them. Peanut Butter Cupcakes Adapted from La Dolce Vegan! Vegan Livin' Made Easy by Canadian Sarah Kramer. Carob chips and vegan margarine are sold in health food stores. 1 cup all-purpose flour 3/4 cup granulated sugar 1 tsp

baking powder 1/4 tsp salt 1 ripe banana, mashed 1/3 cup soymilk 3 tbsp vegan margarine, melted 2 tbsp peanut butter 1/2 tsp vanilla extract 1/2 cup vegan carob chips In medium bowl, stir together flour, sugar, baking powder and salt. In large bowl, blend banana, soymilk, margarine, peanut butter and vanilla with electric mixer until smooth. Add flour mixture. Mix at low speed just until blended. Spoon into 9 muffin cups lined with paper liners. (Fill each 1/2 to 3/4 full.) Sprinkle tops with carob chips. Bake in preheated 375F oven 18 to 20 minutes or until tester comes out clean. Cool briefly. Remove to racks to cool completely. Makes 9.Peter H
