You'll find support at the Mandala Tearoom, a new Scottsdale spot that hopes to prove that you can live up to your principles without compromising on taste. Proprietors Rhea Ashcraft and Jennifer Miranda-Gunn have joined forces with chef Marc Rosso, an Arizona Culinary Institute graduate, to produce what they call world vegan fusion cuisine. advertisement Starters ($8) include tempeh lettuce wraps, cheeseless nachos with three salsas and chipotle black beans, spelt focaccia with three spreads, and a dim sum sampler with a vegetable bun, spinach dumpling and fresh spring roll. Salads ($10) include greens tossed with brown rice, nuts, raisins and kamut (whole wheat kernels). No burgers, of course, but you can get a polenta cake sandwich with olives, red onion, sun-dried tomato and oregano ($8). Among the entrees ($13) are meatless stuffed cabbage and a root vegetable potpie with no pastry crust. Look for raw food dishes in the near future as well. A variety of healthful elixirs ($6) are also in the works. Drink up Digestive Elixir, De-Stressing Elixir, Mental Focus Elixir and Elderberry Flu Elixir. Details: Mandala Tearoom, 7027 E.
